Slaw Recipe




Have you ever had a recipe that you loved but somehow you hadn't made it in months or years, and you wonder why?
That happened to me last weekend. We were having a picnic at a local lake and I said I would bring the slaw. Well the temperature was in the 90's and I thought mayonnaise might not be a good idea. Then I remembered I had a recipe for Marinated Cole Slaw. Have you ever tried it?  It is really good. Here's the recipe.



  1 large head cabbage, graded thin slices

2 med. onions, cut small (optional)

1 large bell pepper, cut small pieces

1 finely chopped carrot

mix together and sprinkle 3/4 cup sugar over mixture and let stand.

Bring to boil for 5 minutes, 1 cup apple cider vinegar, 1 Teaspoon salt, 1 Tablespoon sugar, 1 1/2 teaspoon mustard seed, 1/2 cup veg. oil.  Pour over cabbage while still hot, stir let stand for 24 hours in refrigerator.  Serve and enjoy.

 My girls had forgotten that they liked it.  I'll be making it again soon to take to my sisters for our family get together on Sept.6th. Maybe even more now that I have remembered that I love it!

Dauset Trails Picnic




It was a good day for a picnic, so two of my daughters and I loaded up our cars with 5 children from the ages of 9 to 12 and headed out to Dauset Trails Nature Center nearby.  Only 3 were ours, the other 2 were friends they brought along. The weather was in the 70's this morning so it was perfect.




 As soon as we could unload the car, we set up the table for our picnic.





 We headed across the bridge but when we were about halfway the children got so excited, we had to stop and see why.



 They were so big, these turtles that had the children so happy!



After feeding them and laughing and enjoying them swimming around we headed down the trail.



We walked on down the trails, they were so nice and wide. Then across the way one of the boys saw a blue heron (if that isn't how it's spelled blame spell check)  I took a photo but couldn't get too close so it isn't too clear.





We saw the Barn Owl next.


There was a deer and a Buffalo!




Then we saw a really big frog and squirrel on a tree stump!
and



No, they aren't real, but sure was cute!


 The flower garden is always my favorite!

 We walked down more trails, I sure got my exercise for the week in today!

There were always benches along the trails to stop and rest.



The Log Cabin office had rocking chairs on the porch and we sat there and watched the hummingbirds and lots of other birds fly around.




I took 51 photo's but didn't think I should post all of them. You would have thought this was our first trip here,,no,, I have been going there and taking my grandchildren since they were 1 year old. It's so pretty and peaceful there, it just invites you to return time after time. With the children running around and playing with the turtles and enjoying all the animals, everyone had a great day!
But now it was time to load up and go, but we'll be back one day!

Cake and Recipe







Yesterday was my birthday, and my daughter, Gina, made me a cake.  My was it ever good, so juicy it just melted in my mouth!
I know you will love it and it's so easy to make.

1 Duncan Hines cake mix
3 eggs
1 cup milk
1/2 cup vegetable oil 
1 small box instant vanilla pudding
1 teaspoon vanilla extract

Mix all together until smooth, pour into a 9x13 greased and floured pan.  Bake at 350 degrees until a tooth pick comes out clean.
Poke holes in the cake. Mix 1 can cream of coconut and 1can condensed milk together and pour over cake. Let cool completely and spread cool whip on top of cake for icing and then toast coconut and sprinkle over icing.

Broken Fences





 "In All thy ways acknowledge Him, and He shall direct thy paths"

As I drove to town one day this week, my eyes fell on this fence up the street from my home. The broken fence and all the weeds that surround it, hasn't been taken care of.


I thought, " How sad, that this pretty white fence has been neglected". It reminds me of other things in our lives that are like this, broken and unamended, relationships in our friendship, marriages, our spiritual lives and many others!

Here is a poem I found, by Milica Franchi DeLuie

My broken heart
My broken spirit
My broken mind
My broken family
My broken dreams
My broken life

Through out the years
I've tried and tried
with much persistence
I've tried to fix
my broken existance
Only to learn to my dismay
My shattered life
As is will stay.

How sad! I wanted change that last line and insert
"doesn't have to be this way,
With Faith and Trust in God,
it can be fixed some day!"



 If our time and energy isn't worth putting the effort into making our lives what God intended it to be, then we have failed, but by His Grace we can mend our fences, not only with each other but with Him!


"Let us not become weary in doing good, for at the proper time we will reap a harvest if we do not give up." Galatians 6:9 niv

The author of the poem, to me, seems to have given up.
Take care to mend your fences and face tomorrow with

Where do Birds go!






 A few weeks ago a little bird made a nest in one of my hanging baskets, and every day I watched it come and go.  When the nest was finished and the bird wasn't there, I took it down and looked inside, there inside was one tiny egg. I watched the bird every day until one day it didn't come, I wondered after a week when it didn't return just what happened to it. I guess I'll never know.

Breakfast on the Patio ~ Hummers



It's been really cool in the mornings the last few days. A great time to take my cup of tea and English Egg muffin with Provolone cheese onto the Patio for breakfast.





I made myself an English Egg Muffin



Along with my cuppa Tea!

I love my teacups with the butterflies on them.


Sitting there enjoying the cool air and my breakfast, along comes 3 Hummingbirds fighting for the feeder.













They were so cute but one of them would sit on the pole with my birdhouse and watch for the others, when they would come it would fly over and chase them away. Silly hummers! Why can't they share.
