MAY CALENDAR TEA



When I bought my 2013 Teapot and Tea Calendar, I looked at all the months to see the pretty tea pictures.  May had a recipe for a Victorian Sponge Cake, and I truly meant to make it and blog about it in the month of May but, Life got in the way.   Although I did make it and had my quiet Teatime last Friday,  I am just now getting around to posting about it.

This is my Tea




My cake didn't rise as much as the one on the calendar.  I went right by the recipe, but..... it was really good.  Don't know why it didn't rise more.





 I would make it again and should you try it please let me know how yours turns out.




Victoria Sponge Cake Recipe


I dusted mine with powdered sugar instead of the superfine sugar and added a tablespoon of strawberry jam on top. If anyone has trouble reading the recipe let me know and I'll edit and type it in.

The cake looks like it tastes good--funny that yours turned out looking more like a pancake than a cake. Wonder why.

Maybe something to do with the self-rising flour...how long did you have it? I wonder if the self rising part could have lost its punch! Still looks delightful...love your table settings, and everything just looks so refreshing. Thank you for sharing with us. I think your tea calendar must be different than mine. I don't remember that picture. No...I just went back and looked at May again,and sure enough, we have the exact same calendars!!! My sister gives me mine every year for Christmas. I save them from year to year because the pictures /recipes are so special. But I forget what they look like as soon as I turn to the next month...duh! Actually, May just flew by so quickly that I never took time to sit back and enjoy it!

I made two of these cakes last year and could have eaten the whole thing both times. Yours looks delicious to have with a cup of tea.

Your tea is gorgeous, Syl!

I think your cake rose fine.....they just used a smaller diameter cake pan, which make it thicker to begin with, see the size difference if you look closely?

Also, if you have REALLY FRESH rising powders (baking powder and baking soda) it always works better. I always buy fresh when making cakes - the soda goes into the garbage disposal to give it a nice cleaning.

Your tea is beautiful - I love the lace doilies, they add en elegant touch. Your cake looks scrumptious! I have never made a sponge cake...maybe someday I will :)

Hi Sylvia,
I have never had much luck making sponge cakes either. My Nan can make them beautifully though and she always says that the temperature of the room makes a difference and the eggs must be at room temperature.
I always buy mine from the store now :-)

Your tea time is so lovely and the cake looks so delicious! I've never seen a calendar that has tea's and recipes for the month. I'll have to try and find one for next year!
